Peach & Chevre Salad ::

1 tbsp. balsamic vinegar
2 tsp. fresh lemon juice
1 tsp. honey
¼ tsp. Kosher salt
3 tbsp. extra-virgin olive oil
4 ripe peaches, peeled and sliced
6 c. baby lettuce mix
½ c. Cou Rouge Chevre or Cou Rouge Honey Chevre
½ c. toasted almonds or candied pecans
Coarsely ground black pepper, to taste

Whisk together vinegar, juice, honey and salt, then add oil in a stream, whisking until thickened. Divide lettuce among eight salad plates. Top with peaches, chevre and nuts.

Drizzle with dressing and sprinkle with pepper.
