Cou Rouge, it's simple. We're all about

Desire Dunn
owns Cou Rouge Cheese Company, starting
the goatcheese specialty operation in
2006 as a way to continue working with
animals.
"My
whole life, I've loved working with animals,"
Desire said.
For the last 10 years, she and her husband,
Charlie, have raised race horses on their farm
on the northwestern outskirts of Lubbock.

Cou Rouge Name :: Many might
already know that Cou Rouge (pronounced:
Coo Roo-shz) is french. It gets a chuckle
out of folks when Desire tells them "Cou"
is french for "neck" and "Rouge"
of course is french for "red."
Hence, "Red
Neck" Cheese Company makes itself
known as the best in goat cheese products
in West Texas.
